Mario Buccellati is a plant–based chef, restaurant consultant, the founder Mariolino's and The Eight Eat Experience. He has a deep passion for creating tasting menus and entertaining through food. His cuisine blends modern Italian technique with global influence. With over a decade in hospitality, he's held multiple leadership roles, including Chef de Cuisine for a leading vegan restaurant group in New York City, and has consulted for restaurants internationally. He's currently consulting at Orchard Grocer in the Lower East Side with menu and product development.

Scott Winegard is a New York–based chef and creative director known for deeply seasonal, vegetable-driven cuisine that blends fine dining precision with warm, intimate hospitality. Over a three-decade career, he's led kitchens, and assisted in opening restaurants across America. He earned critical recognition with a Michelin Bib Gourmand for his produce-driven approach. His work spans from New York and Los Angeles to working in Copenhagen at Noma.

Is the menu vegan?

Yes, the menu is 100% vegan. Many ingredients used in this menu are sourced from Union Square Market and the garden of the event space.

Is there a gluten-free option?

There are only 2 dishes that contain gluten: the Pappardelle Crown and Koji Bread. Substutions can be made if requested ahead of time.

What are the beverage options?

Guests are welcomed with a seasonal welcome drink, followed by a selection of crafted spring-inspired mocktails designed to complement the menu. Filtered still and sparkling water will be provided throughout the experience. Guests are also welcome to bring a bottle of wine, and we will be happy to chill and serve it.

How long is the experience?

The experience is approximately 2.5 hours. It begins with a 15-minute standing reception featuring light bites, followed by a seated tasting menu around a shared table for approximately 2 hours.

Where does the experience take place?

The experience is held in Long Island City on a private rooftop terrace garden overlooking the Manhattan skyline. The exact address will be shared upon purchase.

What is your refund policy?

All ticket purchases are final and non-refundable due to the limited nature of the experience.
